These days, a lot of the chocolate out there is made so it’s always the same. Same flavour, same shine, same texture… and that’s fine, it works. But of course, you lose quite a bit of what cocoa really is. When everything is so controlled, in the end you’re not really sure what you’re eating.
But when chocolate is artisanal, different things happen. It doesn’t always turn out exactly the same, and that’s not a problem. It’s actually the other way around. It has to do with where it comes from, with the cocoa, with how it’s made. Just like wine or olive oil, there are small variations, nuances… things that change and that, in a way, make it feel more real.
At Abuela Ili, that’s more or less how we work. Without obsessing over everything being perfect or identical. We’re more interested in respecting the product, letting it have its own character. So that when you taste it, something tells you this isn’t an industrial, mass-produced thing.
And in the end, that’s it. Chocolate that tastes like it should.
